The most expensive coffee Rasheed has ever bought, and the one he is least apologetic about. Ninety-six hours sealed at altitude turns the geisha florals into something closer to perfume than fruit — rosewater on the nose, lychee in the cup, and a finish that keeps going long after the cup is cold. Fifty grams is a fortnight of very good mornings.
V60 or a flat-bed brewer. One bloom at 50 g for 45 seconds, then two pours to 250. Grind a click coarser than you think — this lot gives everything up early and gets astringent if you chase it.
